Back in 2014, we were on the lookout for the perfect pastries to refresh our bakery selection. That’s when we came across Yeast and their very special range of handmade viennoiseries.
We’d knocked on a few bakery doors before we finally found Yeast at Hackney’s Broadway Market. Immediately we could tell that Ben and Angela had mastered the art of viennoiserie. Not only were they making superior croissants, but also beautifully baked pains au chocolat and Danish fruit pastries that had just the right texture.
A lot of it’s down to sourcing simple but high-quality ingredients, including the very best Normandy butter. That and the bakery’s meticulous attention to detail, combined with creative flair.
What happened next
Sourced Market has been working closely with Ben and Angela to develop new additions to their already extensive range. They’ve recently introduced another speciality called Kouign amann, which is a traditional Breton cake made from layers of caramalised sugar and buttery dough. It’s one of Yeast’s signature products and has been a huge hit with our customers – as well as with our team.
